Pork Sausages (per pound)
Selection of handcrafted pork sausages made from local meats and the most delicate European spices. We use pork shoulder and lean cuts of pork belly exclusively. No fillers ever! We only use natural hog casings, and they often vary in diameter, which gives 3 to 4 sausages per pound. Our links are packed and wrapped in three layers for extra protection (saran wrap, vacuum seal, and freezer-grade butcher paper).

- Mild Pork w/Fennel & Cheddar$12Well-balanced pork sausage with fennel, sweet stone ground paprika, dried shallots, garlic, salt, and a perfect amount of aged Tillamook Cheddar. The best way to preserve is by baking sausages in the oven at 385 F for about 20 minutes (10 min each side). They can be finished on the grill or a pan for about a minute.

We only use natural hog casings, and they often vary in diameter, which gives 3 to 4 sausages per pound. Our links are packed and wrapped in three layers for extra protection (saran wrap, vacuum seal, and freezer-grade butcher paper).
- Hickory Smoked Spicy Beef$14Hickory smoked beef sausage with European spicy paprika, cayenne, coriander, garlic, salt, black pepper, and hickory smoke.
- Mild Beef w/Gouda & Basil$15Well-balanced mild beef sausage with double cream Dutch gouda cheese and dried basil. The best way to preserve the gouda cheese is by baking sausages in the oven on 385 F for about 16 minutes (8 min each side). They can be finished on the grill or a pan for about a minute.

Bacon (per pound)
Our bacon is made from the highest quality pork belly and pork loin. It takes ten days to create this beauty. Bacon is cut by hand and then packed in saran wrap, vacuum seal, and freezer grade butcher paper.

Sea Salt Hogg Belly Crisps (per half pound container)
Unlike pork rind (fried pig skin), salted Hogg belly crisps are made from firm parts of the pork belly. Hogg belly crisps are perfect for appetizers, charcuterie boards, or baked biscuits with their buttery flavor. Hogg belly crisps are like our Hoggbutter, pure labor of love. Making such delicious treats takes hours of constant stirring and temperature maintenance. While it takes hours to make them, we promise you will need minutes to eat them. Enjoy!
