    • Phrase & Fable - German Style Dunkelweizen, 5.3%
Our interpretation of the classic Bavarian dark wheat ale! We used a fairly neutral European Ale yeast to avoid too much phenolics, and the resulting beer is a lovely showcase of the Wheat and Munich malts. A touch of toasty flavors accompany a noble hop bitterness. Cloudy & unfiltered, as is traditionally served.
      • Novachord, Czech-style 11° amber lager, 4%
A Polotmavy (or, "half-dark") is an amber colored lager brewed with pils, vienna, and munich style malts sourced from our favorite Czech maltster. Kazbek hops lend a light spicy/bitter component. Slightly maltier and more substantial than our pale lagers, but still very drinkable!
        • Universal Longitude - West Coast Inspired Pale Ale, 6%
This lovely beer is an exercise in balance and drinkability. Using a blend of North American and British malts, classic northwest hops (CTZ, Centennial, Chinook, & Simcoe), expect a clean bitterness, and the classic piney, resinous, & citrus aromas characteristic of the style.
          • Here There Be Tygers, IPA 6.8%
This re-imagined version of an older Brick & Feather beer was brewed using new techniques we developed the last few years. Tygers was brewed with big kettle hop additions of Simcoe and Amarillo, fermented with our Kolsch yeast, and lagered for a month before getting dry-hops added at cold (38 degrees) temperatures. This process lends a unique quality to an IPA! We taste big Orange & Pineapple flavors, with some grapefruit rind and pine rounding things out. We find it a bit more crisp and drinkable than your typical IPA.
            • Franklin Proper - English-style Bitter, 4.1%
We used floor-malted Maris Otter barley and some English caramalt to form the base of this simple pale ale, hopped it with East Kent Goldings, and fermented with a classic British Ale yeast. The water was treated with heavy mineral additions, to mimic the hard waters in parts of England where these beers originated. Bitters were and are the classic ale consumed in cozy pubs throughout the UK. We hope you enjoy ours!
              • Astera - Bavarian Style Pils, 5%
Our newest lager was brewed in the style of a southern-German pilsner, and features lush pale malt flavors of honey and bread, capped with the floral aromatics of Hallertau Mittelfruh hops. Brewed with floor-malted barley from Bamberg, and fermented with the classic pils yeast strain 34/70 (our first time using this strain!)
                • Cat Grass - Pale Ale, 4.9%
Another recipe from our brewer Molly. A soft base beer featuring flaked wheat and malted oats, hopped assertively with a blend of locally grown "Chaos" hops (Four Star Farm) and Northwest Chinook & CTZ hops. A pronounced bitterness, but very clean and present. Our signature haze, lot's of wonderful fruity aromatics.
                  • In An Analog World - Czech Style 12° Pilsner, 4.8%
The 12° Pale lager is what most of us think of when we talk about Czech Pilsner. Malty, but refreshing and drinkable, thanks to the floor malt we sourced direct from a small Czech producer. Classic Saaz hops provide the snappy lemon & herbal notes we love so much. A lager yeast with some personality brings the whole party together. We simply love this beer & hope you do too!
                    • Gramophonic - Czech Style 10° Pale Lager, 3.9%
Our interpretation of the session-strength pilsner commonly consumed at pubs in the Czech Republic. We sourced malt from a small Czech producer, utilized Kazbek hops, a newer aromatic cultivar, in the kettle, and fermented with one of the "Original" Czech yeast strains. The beer is crisp and refreshing, with a delicate malt foundation, and some spicy/lemony character from the hops.
                      • Melodic Drop - IPA with locally grown hops, 6.8%
We started with a neutral malt foundation, and layered waves and waves of Triumph hops from our friends down the road at Four Star Farms. The beer is smooth & clean, with a slight haze. Flavors of ripe melon and peach dominate.
                        • Prograde Motion - Rice Lager, 4.9%
Brewed with North American Pilsner malt, toasted white rice and jasmine rice, this crispy lager is a pure delight! We hopped with with locally grown Centennial from Four Star Farms; we taste cereal malt, jasmine, lemon zest, and bread dough. Super refreshing yet complex enough to keep you interested in another.
                          • Goldfinch - American Table Beer, 4%
This lovely little Pale Ale was one of the original recipes here back in 2015. Brewed with a clean ale yeast, hopped primarily with Australian Vic Secret, and cold-conditioned for several weeks, it is hoppy and complex, yet retains a smooth drinkability that we prize so much.
                            • Montague Gothic - Kolsch Style Ale, 5.2%
Kolsch very well may be the perfect beer: crisp and refreshing like a lager, but with the subtle fruitiness of an ale. Our version displays the deliciously soft flavors of German pale malts, coupled with a noble hop bitterness that politely reminds you that it's there. It is fresh and effervescent and simply a delight to drink!
                              • Planet Claire - Farmhouse Style Ale, 5.4%
Brewed with our favorite French Pilsner malt, wheat, and rye. Hopped with locally grown Centennial from our friends at 4 Star Farm. Fermented with an expressive saison yeast. Simple, elegant, and so refreshing!
                                • Tycho Anomaly - Schwarzbier, 5%
We went very traditional on this one; Pils & Munich malts from our favorite German Maltster, Hallertau Mittlefruh hops, and our house lager yeast. A rich color is obtained through debittered black malts, which add a subtle coffee/chocolate flavor without the intense roasted flavors you would expect in a porter or stout. We gave this one an extra month in the tank to further smooth out these flavors (14 weeks production time!) The beer is medium bodied and drinks almost like a helles or a dunkel. We taste sweet malts and hints of dark bread. Some noble hops on the nose. Classic lager fermentation profile.
                                  • Trees Like Tassels - IPA, 7%
Another recipe from our brewer Molly: this IPA straddles the line between classic Northwest and modern Northeast IPA. We used some wonderfully old-school hops to coax that Pine & Citrus that you remember, with a touch of berry-like fruitiness a well. Assertive yet super clean bitterness, medium body but finishes dry. Incredibly refreshing for a 7% IPA. Enjoy!
                                    • 20 Sided Die - Belgian Style Table Beer, 3.8%
A Table beer inspired by the classic table top role play game, Dungeons & Dragons. Brewed with continental pilsner malt, Rye and Oats, and hopped with Czech Saaz. A touch of wildflower honey was added during fermentation to add a subtle acidity and floral notes which compliment the hop choice. Smooth, refeshing, and crazy drinkable!
                                      • Meantone Temperament - Hoppy German Pils, 5.1%
Brewed with Pilsner & Vienna malts, and confidently hopped in the kettle and whirlpool with Hallertau Blanc and Saphir. Fermented with our house lager yeast. A kiss of Hallertau Blanc in the conditioning tank for good measure. Unfined and unfiltered. We taste sweet malt, fresh cut grass, white grape, and hop candy. A touch more bitterness than our "classic" pilsner, Transferable Skillsets. An absolute DELIGHT of a beer!
                                        • Ignore Alien Orders - Double IPA, 7.8%
A wonderfully smooth and soft double IPA. We used Sabro, a relatively new hop variety, which add complex layers of tropical fruit, accentuated by HBC431 and Citra hops to round things out. We adjusted our water treatment for this beer in an effort to play on the (perceived) sweetness of its Pilsner malt base.
                                          • Scotland But Further - New Zealdand double dry hopped Pale, 5.7%
What started as a rotating, all-New Zealand hopped DDH Pale has evolved to solely feature Nelson Sauvin, the uniquely fruity and zesty new world variety. We taste Orange and White Grape, with a subtle diesel/resinous lupulin nose. Silky mouthfeel and drinkably smooth at 5.7%
                                            • In Absentia - IPA, 7.2% abv
Brewed as a bigger alternative to our "Zelda" IPA, "In Absentia" features a lush body packed with pineapple, orange, passion fruit, and mango notes with a touch of piney resin. A gentle bitterness supports the flavor of the five different hops used in this beer.
                                              • Sauron's Nightlight - Robust Porter, 7.3% abv
Dark and powerful, but with much more pleasant disposition that it's namesake, "Sauron" pours deep black with a tight, espresso-light foam. A rich, viscous body showcases complex flavors of cocoa, coffee, dark sugar and some dried fruit. Huge roasted flavors are complimented by a slight buttering charge of hops, lending a soft, clean finish.
                                                • Nature Loves To Hide - Franconian Style Unfiltered Lager, 4.8% abv
Inspired by the unique brewing tradition in northern Bavaria, we've put togther our version of a classic un-filtered lager (zwickelbier). The germans keep their recipes simple, and rely on the quality of their ingredients and their skills as brewers to produce compelling yet refreshing beers. Ours utilizes pilsner and munich malts to provide a soft, bready, and slightly toasted foundation, upon which we stack the noble Hallertau hop, which lends a slightly spicy, fruity bitterness. The beer is malty without being cloying, finishes slightly dry and leaves the palate begging for another sip!
                                                  • Letters from Zelda - IPA, 6.5% abv
Our original American IPA! This beer features a lush, fruity body with notes of tangerine, grapefruit and melon, set upon a smooth, supportive malt base. The finish is clean and slightly sweet. Brewed with American and British 2-row barleys, and hopped with five different hops, including a healthy dose of Amarillo.
                                                    • Positively 11th Street - Pale Ale, 5% abv
Our signature American Pale Ale. Heavily dry-hopped with Mosaic and El Dorado, and set upon a foundation of North American and British malts. Soft, slightly sweet body gives way to a quick, clean finish.
                                                      • Throw Me the Idol - Double IPA, 8.2% abv
This sturdy IPA was built to showcase the wonderful El Dorado hop variety. The malts were selected to present a soft sweetness and lend a hazy deep gold color. Bristling with hoppy goodness, Idol includes 4 other hop varieties blended to add depth of character; orange pith, pine, blueberry, pineapple and lemon flavors are prominent, with slight warming alcohol coming in at the finish.
                                                        • No Use For Smugglers - Double IPA, 8% abv
We started with the malt base for "Throw Me The Idol", but changed the hop combination completely, using Mosaic, Citra, Amarillo, and Cascade. The resulting IPA is incredibly smooth on the palate, and is wonderfully fruit-forward, with layers of orange, peach, pineapple, and ripe berries. Enjoy! And yes, Han did shoot first.
                                                          • Kitten With A Whip - Bavarian Style Helles Lager, 5% abv
Our interpretation of the classic Bavarian pale lager, a beer of subtle beauty and exquisite refreshing character. Kitten is built on a blend of our favorite pilsner malts, hopped with German Tettnang, and fermented with an authentic German lager yeast. The beer displays a careful balance of grassy malt flavors and a slight cereal sweetness; dry but medium bodied; floral hop notes and a trace of bready fermentaion character. It is simple yet intricate, and a respectful nod to one of the finest brewing traditions in the world.
                                                            • Half-Light Sunbeam - IPA, 6.5%
A variation on Letters From Zelda, this IPA is hopped completely with Citra. Sunbeam hits everything we love about this hop variety; huge orange and peach flavors, an assertive but refined bitterness, beautifully supported by the bright malt foundation of her sister beer. Finishes slightly dry and refreshing.
                                                              • Ode To The Afternoon Crew - Cream Ale, 4.9% abv
The cream ale style was developed by ale brewers in the 19th century, as a way to compete with new pale lager beer being brewed by German immigrants to America. In keeping with tradition, ours was brewed with North American 2-row and 6-row barleys, along with rice, rye, and locally grown & malted corn. Non-barley adjuncts were often utilized by pre-prohition brewers as a way to balance the high protien levels found in the (generally low quality) barley cultivars grown in this country at the time. We find now though that the different grains add wonderful complexity to a subtle beer. “Ode” was fermented with a clean ale yeast, and lagered for an additional 4 weeks, which lends the beer a crisp, refined palate.
                                                                • A Small Group Of Reasonable People - English Style Mild Ale, 4% abv
Mild Ale was once the preferred beverage for the hard working people of he British Isles. It is low in alcohol and quenching, yet surprisingly complex and satisfying, in a way that paler beers just don't quite accomplish. Ours is brewed with traditional floor-malted English barley varieties, and fermented with an English yeast for a slightly fruity and soft Ale.
                                                                  • Transferable Skillsets - German Pils, 4.9%
Our take on a traditional German-style pils. We used German pilsner malt, hallertau Mittelfruh and Tettnang hops, and fermented with our Favorite Bavarian yeast. This unfiltered lager was allowed to cold condition for 12 weeks before it was packaged, creating an exceptionally smooth body, clean flavor profile, and a decadently frothy foam head on top.
                                                                    • Wolf Interval - Bamberg-style Smoked Marzen, 5.3%
We modeled this beer after one of our all time favorites! Brewed with traditional beech smoked pale German malt and Munich Malts. Hopped with Hallertau Mittelfruh and conditioned for 9 weeks with our house lager yeast.
