- Braise KidneyBeef kidney is cut in bite size cubes and cooked low and slow in a blend of herbs and spices until soft and tender.
- Fried LiverBeef liver is cut in razor-thin slices stir-fried in vegetable oil until soft, then finish with local herbs and spices
- Stew ChickenBite size pieces of chicken seasoned with ginger, garlic and other local herbs and spices are slow cooked and finished in a rich brown gravy.
- Steam CalalooA local favourite, this garden vegetable is perfectly steamed with garlic, onion and escallion until tender. Cooked saltfish is served on the side.
- Ackee and Salt fish (seasonal)Ackee is cooked until tender then sauteed with salt fish in a bed of local herbs
- Okra & Saltfish
- Baked Bean and Saltfishred kidney bean in a rich tomato sauce is sauteed with saltfish onions, tomatoes, garlic and bell pepper.
- Curried Chicken FootChicken foot is seasoned with a special blend of Indian curry powder, turmeric, ginger, garlic and other local herbs and spices. It is braised until soft and meat falling off the bone.
- Salt Mackerel RundownPickled mackerel is sauteed in onion, tomato, scallion and bell pepper and simmered in a stock of freshly juice coconut milk.
