This menu was inspired by the culinary experiences of our homes in Mexico, and the traditional methods of Oaxaca Mexico's pre-columbian culture of Zapotec indigenous people.

            Five corn tortillas stuffed with pulled chicken or mashed potatoes with poblano, topped with cheese, sour cream, onion, tomato and avocado. Smothered in your choice of salsa. Salsa options are: MOLE: pumpkin seeds, dry chilies, and cacao. SALSA VERDE: roasted green tomatillo puree, onion and cilantro. SALSA ROJA: spicier salsa, serrano pepper, tomatoes, and onion.

                  One pound of slow braised pork shoulder and beef sirloin with beer and dried chiles; one pound of slow braised pork shoulder with orange juice, axiote and dried chiles; 30 corn tortillas, 1/2 a litre of poblano scented rice, half a litre of beans, and cilantro, onions, limes, and spicy salsa.
