South Indian

Dosas are the product of South-India’s staple agricultural produce- rice and lentils. Dosas, however, are made from an airy batter of fermented ground rice and urad dal. They cook rice and lentils separately but they also combine the two to make flat pancakes or breads called Dosas. This batter is spread out on an iron flat griddle with the back of a ladle instead of letting the batter flow in the pan. The pan is very hot but the surface is cooled with cold water so the batter does not stick and comes off easy. Steamed, baked or fried, these are eaten plain or stuffed with potatoes, peas, lamb or coconut. They are also dipped in curries, stews and condiments. The humble dosa is served for breakfast or as snacks. However, an important dish served in every south Indian wedding.
