Vincenzo recommends choosing a pasta shape and sauce that compliment each other: spaghetti / linguine / tagliatelle / fusilli / farfalle / penne. Pasta is traditionally cooked 'al dente' - firm to the bite meaning not too soft. Fresh pasta (pasta all' uovo 'egg pasta') includes eggs. Please enquire about gluten-free and eggless.
