BARREL PROGRAM
- Grato - Lambic-style ale with Italian plumsDRY / plum / tart / 6.8% Delicate and dry, with fruit-forward notes of plum and dried fruit. Rich and savory, with biscuity, earthy Brett notes. This beer fermented and aged on Italian plums for 18 months in barrels from nearby Bending Branch Winery. Just days before we filled with beer, these barrels held bold Italian red wine. We lovingly refer to this farmhouse ale as “grato”, an Italian word literally translated to “grateful” or “thankful.” Enjoy now, or age in your cellar for years to come.

- Glen Rose - Lambic Style AleWoody / Tannic / Vinous / 6.5% Draft & Bottle This unfruited, mixed-culture farmhouse ale which pays homage to both our Hill Country well water and the beer styles of the Senne Valley of Belgium. Glen Rose is one of the formations that make up the Trinity aquifer, which provides Vista with mineral-rich water. A blend of six cultures produces a mildly tart ale with hints of dark fruit and leather. Golden in color, with notes of red wine, vanilla and oak from the freshly-emptied red wine barrels from Bending Branch Winery in Comfort, TX. The fruity and tannic flavors are a natural pairing with soft cheese such as Brie, a grilled steak, or fruit desserts.

- Desert Skies - Sotol-Barrel Aged Black Pilsner (Collaboration with Desert Door)We teamed up with Desert Door, our Driftwood neighbors and producers of handmade Texas sotol, and The Fairmont Austin to celebrate the beauty of the stars and nighttime skies. Our shared philosophy of handmade products enjoyed in the Hill Country led to this unique collaboration: the first sotol-barrel aged beer. We took a small batch of our gold-medal winning German Schwarzbier and aged it in freshly emptied Texas Sotol barrels. The result is a distinctive brew best shared over a meal with friends. A deceptively light- bodied Dark Skies base gives hints of dark cocoa, coconut and roasted marshmallow. Barrel aging lends complexity with rich botanical, vanilla and bourbon-like notes of the Desert Door Oak-Aged Texas sotol.
