                              Choose from a variety of cuts and sizes to be seared at high heat to capture flavor and moisture. Can be served with a sauce of your choice or coated with homemade dry rub and finished with a melted herb butter. Accompaniments can be added: Mushroom ragu, grilled mushrooms and onions, Oscar ~ lump crab meat, asparagus/broccoli, and a Hollandaise sauce.

                                Seasoned, pan-seared and roasted in the oven with your choice of fresh vegetables and potatoes, served with homemade gravy.

                                                      Tangy lemon and shallots seared into chicken breasts, topped with an array of fresh vegetables, herbs and spices. Served with starch of your choice.

                                                        Whole chickens stuffed with a rosemary lemon mixture and roasted for several hours, sliced and served over wild rice and fresh herbs. Other variations available.

                                                          Chicken breast in pastry or a parchment pouch served with veggies and herbs, butter and a white wine Beurre Blanc sauce and your choice of starch.
