GRAINS
STEP #1
- THAI JASMINE FRIED RICELong grain rice, lightly sautéed with olive oil, kale and carrots.
- FLUFFY COUS COUSCous cous is actually a pasta, made of wheat or barley. Served lightly seasoned, and sometimes with cranberries mixed in.
- HEARTY PEARLED BARLEYChewy and hearty whole grain... NOT just for beer anymore.
- QUINOA (Keen-Wa)Power Grain! High in protein and fiber, quinoa is actually a seed. Nutty and herby tasting.
- CILANTRO LIME RICELong grain rice, steamed with our famous chimichurri sauce.
- CARAWAY ROASTED POTATOESOkay, we understand that this is NOT a grain, but we love it as a base regardless. Red potatoes, lightly seasoned with caraway, salt and pepper.
- HEALTHY GRAIN COMBOThis medley changes, usually consisting of quinoa, barley and cous cous.
PROTEINS
STEP #2
- SAVORY PULLED PORKSlow roasted pulled pork, cooked to mouthwatering perfection. Lightly seasoned with salt and pepper.
- JALAPEÑO SHREDDED BEEFShredded beef chuck tenders, served with fresh jalapeños.
- TURKEY CARDAMOM MEATBALLSGround turkey balls mixed with cardamom (usually used in baking and has a floral flavor). Delish!
- JUICY SHREDDED CHICKENThe whole CHIC! Slow roasted chicken. Lightly seasoned with salt, pepper and garlic.
- DUCK CONFITThe whole DUCK! Slow roasted and lightly seasoned. Confit means to let the protein sit in its own juices overnight, allowing the development of all its wonderful flavors.
- SOUTHWESTERN CHICKENRoasted chicken thighs with black beans, carrots, scallions and southwestern seasonings.
- TUSCAN CHICKENRoasted chicken thighs with kalamata olives, artichoke hearts, turmeric, white pepper and sea salt.
- HERB ROASTED LAMBBraised lamb with chopped tomatoes and dried herbs.
- APPLE BRAISED PORKA holiday inspired dish. Slow roasted pork with apple and hints of cinnamon.
- IRISH CORNED BEEFSeasonal Irish dish, available all year long, but especially enjoyed around St. Paddy's Day. Traditional braised corned beef brisket, hand-shredded and served with sauerkraut.
- SALT & PEPPA CHICKENRoasted chicken thighs with kidney beans, celery, three types of ground pepper and sea salt.
VEGAN PROTEINS
- COCONUT ROOT VEGGIE CURRYYellow curry with coconut milk, mushrooms, potatoes, celery, carrots and onions. Mild and vegan!
- CURRIED LENTILS WITH HOMINYOne of our original vegan favorites. Green lentils simmered with hominy, celery and onions. We add dijon mustard for an extra tangy kick.
- SOUTHWESTERN BEAN MEDLEYFive bean medley with green chiles, mild and hearty.
- BEET NUT BALLSThese are hard to beat! Shredded beets, bound with tahini, orange zest and slivered almonds.
- CELTIC WHITE BEAN STEWOne of our Irish inspired delights. Great Northern white beans, shredded carrots, cabbage and kale.
- TOFU & VEGGIESMarinated tofu with Asian vegetables: bok choy, beech and shiitake mushrooms, shredded carrots and broccoli.

- AVOCADO VELVETOur creamy, tangy version of guacamole. Avocados, sour cream, tomatillo, cilantro and jalapeños. Cool and smooth like Barry White. MILD
- CUBAN MOJOLoaded with fresh orange and lime juice, herbs and garlic. A light refreshing delight. MILD
- BOURSIN CHEESECreamy, cheesy yumminess. Cream cheese, garlic, dill, parmesan, basil and chives. MILD
- TANGY HERB MUSTARDMainly served with our Irish Corned Beef dish. Herby and tangy, house made Dijon mustard. MILD

- GADO GADOUsed widely in Indonesian cuisine, Gado Gado means to "consume without rice." Peanut-based sauce with lime, coconut milk, chiles and tamarind. MILD/MEDIUM
- MISO HONEYOh Miso Honey! Sweet and savory sauce with miso, ginger, honey, chili paste and sesame. MILD/MEDIUM
- SRIRACHA SOUR CREAMA fan favorite! Sriracha is an Asian hot sauce made from chili paste. We mix it with sour cream for a MEDIUM heat sauce.
- PLAYA FIRECoconut milk based sauce made with puréed roasted vegetables, lime and garlic. Inspired by long days lying on the playa (beach). MEDIUM/HOT
- ESTABAN YUCATAN FIREMuy caliente! Inspired by Steven and Mandy's wedding spot, Tulum, Mexico. Fresh lime juice, jalapeños, habañeros, garlic, salt and pepper. HOT
